Salsa Time

SalsaDuring the summer months I absolutely love making salsa. For home or BBQ’s, salsa is easy and makes for some fine eats. Here’s my recipe…

1/2 large white onion

2 green onions

1 small fresh tomato

1 14.5 oz can of stewed tomatoes (mexican style with garlic, spices and onions – if you can find)

1/2 bunch of fresh cilantro

Juice from 1-2 limes, to taste

1-2 serrano peppers, to taste, seeds removed

2 garlic cloves

Salt to taste

Pepper to taste

Salsa

For me, a blended or at least mostly blended salsa is the best way to enjoy it. Throw all the ingredients into your food processor and run on low for about 30 seconds, using the pulse feature afterwards to get the consistency you want. If a pureed style isn’t your bag, chop everything up and put it into a container for a chunky, fresh salsa.

After tasting and seasoning to exactly what you want, put in the refrigerator 30 minutes to an hour so everything can marinate together and bring out the flavors.

Make some chips, or buy some, and enjoy! To be honest, a good French/Belgium style Saison pairs nicely too.

Cheers!
